This Blueberry Feta Salad is my go-to salad for all seasons! My power salad. It combines fresh blueberries with feta cheese, walnuts, avocado, and Victoria Akkari Culinary Argan Oil. Perfect for any celebration!

 

Ingredients (serve one)

6 c. mixed greens. 1 c. blueberries. 4 oz. crumbled feta cheese ¼  c. walnuts ½   Avocado ¼ tsp. Black pepper \ pinch of salt For the Dressing: 1/2 Tbs. Victoria Akkari Culinary Argan Oil Additionally: Chekpeas.

Instructions

In a salad bowl, place the mixed greens as the foundation. Scatter the fresh blueberries over the greens. Evenly distribute the crumbled feta cheese. Sprinkle the chopped walnuts for crunch. Add the sliced avocado for creaminess. If using, add a handful of chickpeas for extra protein and texture.

Lightly season with black pepper and a pinch of salt to enhance flavors. Drizzle the Victoria Akkari Culinary Argan Oil over the salad. Gently toss everything together to evenly coat the ingredients.

Avocado Pesto Fettuccine Pasta

Avocado Pesto Fettuccine Pasta is a creamy, flavorful twist on classic pesto pasta. This dish combines ripe avocados with fresh basil, garlic, lemon juice, and Parmesan to create a rich and velvety sauce that perfectly coats fettuccine noodles. With its vibrant green color and nutty, zesty taste, this pasta is a deliciously healthy and satisfying meal, perfect for a quick weeknight dinner or a special occasion.

Ingredients (serves two. Vegan-friendly)

Fettuccine Pasta. 2 avocado(s), raw. 50g olive oil. lime juice, of 2 limes. lime zest, of 2 limes. 1/2 bunch coriander. 1 teaspoon(s) chili flakes. salt. Pepper. 100g cashews. basil, fresh. 1 tablespoon(s) olive oil. 4-5 Cherry tomatoes.

Instructions

Boil the pasta for 8 minutes in a pot full of boiling, salted water (Reserve a cup of the boiling pasta water before draining the pasta). In a food processor, add the avocado flesh, 1 garlic (add two garlic gloves for a deeper garlic flavor), cashews, coriander, salt and pepper, and chili flakes. Beat until all of the ingredients are completely combined and while beating, gradually add the olive oil in a slow steady stream, until incorporated. Transfer to a bowl. Add to the bowl with the pesto sauce and mix. If necessary, add a ladleful of the pasta water to make the sauce creamier. Serve and garnish with fresh coriander, chili flakes, cashews, pepper, olive oil, and slices Cherry totatoes.


Pasta Primavera

Pasta Primavera is a vibrant dish that celebrates the flavors of fresh vegetables and herbs, often tossed with a light sauce or olive oil. Typically featuring a variety of seasonal vegetables such as bell peppers, zucchini, and asparagus, it embodies the essence of spring. The pasta, usually al dente, serves as the perfect canvas to absorb the flavors of the sautéed ingredients. This dish can be enjoyed as a satisfying vegetarian option or enhanced with the addition of protein, making it versatile and appealing to a wide range of palates.

 

Ingredients (serve Two)

Mostaccioli Rigati pasta (or any pasta alike or your choice). 1/2 small red onion. 1 green zucchini. 1 yellow squash. 1 read and yellow bell pepper. 4 Garlic cloves (chopped). 10 oz. cherry tomatoes (sliced in half). 1/2 carrot (sliced). 4 or 5 fresh Basil leaves. Olive oil. Salt and pepper. Parmesan cheese (or Pecorino romano cheese).

Instructions

Fill a large pot with water, add a generous pinch of salt, and bring it to a boil. Add the Mostaccioli Rigati (or your chosen pasta) and cook until al dente according to the package instructions. Reserve about 1/2 cup of the pasta water before draining, then drain the pasta. Prep the Vegetables: Thinly slice the red onion. Cut the zucchini and yellow squash into rounds or half-moons. Core and slice the red and yellow bell peppers into strips. Chop the garlic cloves finely. Slice the cherry tomatoes in half. Thinly slice the carrot.

Sauté the Vegetables: In a large skillet or sauté pan, heat 2–3 tablespoons of olive oil over medium heat. Add the sliced red onion and chopped garlic to the pan. Sauté for 2–3 minutes until the onion becomes translucent and the garlic is fragrant. Toss in the sliced carrot and bell peppers. Cook for about 3–4 minutes until they start to soften. After add the zucchini and yellow squash to the pan. Stir frequently, cooking for an additional 4–5 minutes. The vegetables should remain tender-crisp and finish with cherry tomatoes. Season with salt and pepper, then cook for another 2–3 minutes until the tomatoes just start to break down and release their juices. Combine Pasta and Vegetables: Add the drained pasta to the skillet with the sautéed vegetables. Pour in a splash (or more, if needed) of the reserved pasta water to help the sauce coat the pasta evenly. Stir everything together over low heat for 1–2 minutes. This allows the flavors to meld and the pasta to absorb some of the vegetable juices.

Transfer the pasta primavera to serving bowls. Generously sprinkle freshly grated Parmesan (or Pecorino Romano) over each serving. Garnish with fresh basil leaves (While basil is the star here, you can experiment with other fresh herbs like parsley or oregano if desired). Optionally, drizzle a little extra olive oil and add an extra pinch of salt and pepper to taste. Serve immediately while warm.
